Derived from a few online recipes to be similar to my mom's apple cake recipe. I need to get that from her someday to compare.
1 cup all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
3/4 tsp ground nutmeg
1/2 tsp salt
1/4 cup butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar
1 egg
1/2 tbsp vanilla extract
2 cups sliced apples unpeeled
Preheat oven to 400 degrees and grease an 8″ round cake pan.
In the bowl of your electric mixer, beat butter, both sugars and vanilla until well combined. Add egg and continue to beat. Mix in flour, baking soda, ground cinnamon, ground nutmeg and salt. Once fully mixed, stir in apple slices.
Pour into greased cake pan and level gently. Place in the oven and cook for 25-30 minutes, until toothpick inserted in center comes out clean.
Remove cake from pan and cool on a rack
Serve with vanilla bean icecream.
