Mom's Healthy Granola

I think my mom actually got this from my grandmother. I'm not sure if it was ever written down, I've always just made it from memory of how my mom makes it. The basic granola is just the primary ingredients but I usually add most if not all of the optional stuff.

Primary Ingredients:
4lbs (2 big tubs) of oatmeal
1 to 2 cups of chopped almonds
1 cup olive oil
1 cup honey
1/2 cup brown sugar

Optional Ingredients (add 1 or more)
1 cup flax seed
1 cup wheat germ
1/2 cup sunflower seeds (or any other nuts you like)
1 and 1/2 cups Bisquick mixed with water until consistency of pancake batter (makes granola clump)
1 cup yogurt or chocolate covered raisins (add after baking granola but before it cools so that is makes clusters)
Dried banana chips or other dried fruit (add after baking and cooling)

Heat oil, honey and brown sugar on stove until mixed and nearly boiling stirring frequently. Mix remaining dry ingredients in mixer or large bowl. When I make this I do two half batches as that is all that will fit in my mixer at a time. Pour oil/sugar mixture over dry ingredients and mix slowly. If you're adding the Bisquick mix (recommended) pour that over the oatmeal mixture as well and mix. Do not over mix, you want some clumps in the granola.

Dump mixture onto cookie sheets and spread it out so that it's a half inch or so thick. Bake at 350 degrees for 20 to 25 minutes. Stir granola on sheets every 6 to 8 minutes or it will burn. The less you stir the more clumps you'll end up with, but be careful because the bottom will burn pretty easily. It's done when it's a relatively uniform light brown color.
